The jewel in the crown
Oak Blue is an award-winning blue cheese made by Berrys Creek Gourmet Cheese in Fish Creek, South Gippsland.
The story of Berrys Creek Gourmet Cheese begins in 2007 when Barry and Cheryl established the artisan cheese company.
Three decades of experience as a cheesemaker coupled with a strong connection to the land in Berrys Creek and the local South Gippsland community have inspired the team to push all boundaries in their search for perfection.
Blue cheese specialist
Undoubtedly, Barry specialises in making and maturing blue cheeses. Overall, their current line-up includes the buffalo milk, Riverine Blue, and the award-winning Tarwin Blue.
Inspired by Gorgonzola, Oak Blue is one of the more recent additions to their range. In fact, Barry uses fresh local cow’s milk to make 5 kg wheels of this celebrated blue.
Afterwards, he matures the wheels for up to 3 months. During this time, the cheese develops a gorgeous light orange natural sticky rind. On the inside, its pâte is light yellow and is heavily veined.
Be prepared for an assault on the senses! The sharp aroma is dominated by blue mould and the flavour palette oscillates between savoury and spicy. The mouthfeel is creamy and quite luscious.
How to pair Oak Blue
Serve with something sweet like muscatels and honey and wash it all down with a hearty Stout.
