About Pleasant Ridge Reserve

Pleasant Ridge Reserve is a semi-hard cow’s milk cheese made in Dodgeville, Wisconsin by Uplands Cheese. Cheesemakers Andy and Scott drew their inspiration for its recipe from European mountain cheeses like Gruyère and Beaufort.

The story of this raw milk cheese starts well before the cheesemaking process. Their farm is home to a unique herd of cows, which is the result of crossbreeding of nine different subspecies.

Furthermore, they exclusively feed the cows grass during the summer months using a rotational pasture system. Subsequently, this ensures continued access to fresh grass.

Production

Moreover, the cheesemakers only use flavourful milk collected from the months of May to October to make this cheese. The raw milk is made into 10lb (4.5kgs) wheels.

Afterwards, they hand-wash the wheels in a brine solution several times a week during the maturation process, for up to 12 months. This method encourages the development of specific bacteria on the rind that perfectly complement the innate microflora of the raw milk.

Pleasant Ridge Reserve has a fruity and nutty aroma. Its flavour palette oscillates between the sweetness of the milk and the savoury notes imparted by the rind.

This American original has won Best in Show a staggering 3 times at American Cheese Society‘s annual awards.
