About Azzurri Burrata

Azzurri Burrata is a pasta filata cheese made by Azzurri Cheese in Victoria, Australia.

Burrata is an Italian cow milk cheese (occasionally buffalo milk) made from Mozzarella and cream. Whilst its outer casing is solid cheese, the inside of the cheese contains Stracciatella and cream. Overall, this results in an unusual, soft texture. Moreover, it finds its traditional roots in the Puglia region, the heel of Italy’s foot.

“We make Burrata for Friends” are five small words that define what Azzurri Cheese are all about.

This small cheese farm in the Macedon Ranges is the culmination of a journey that began in rural Italy for twin brothers Roberto and Marcello Gessaroli. Growing up on a farm, their earliest memories of cheese were courtesy of their nonno who used to make his own ricotta and caciotta.

The art of pasta filata

Using cow’s milk from local Victorian producers, they now hand-make a wide range of authentic Italian cheeses. Their current offering includes their famous Burrata as well as Truffle Caciotta, Scamorza and Fior di Latte to name only a few.

Undoubtedly, their burrata’s texture stands out in a very crowded market place thanks to the brothers’ incredible pasta filata skills. In addition to this, their natural slow fermentation process produces cheese that has an exceptional depth of flavour.

How to serve Azzurri Burrata

Enjoy this spectacular Italian-style cheese fresh in a salad with cherry tomatoes and basil. Pair with a light white wine such as Pinot Grigio or Grüner Veltliner.
