About the recipe

Filo or phyllo is a very thin, delicate unleavened dough used to make pastries in Middle Eastern and Balkan cuisines. For generations, locals have been making filo pastry by layering multiple sheets of filo brushed with oil or butter. Afterwards, they would bake the pastry.

Some very popular recipes that use filo pastry include Baklava and Börek. And, of course, our featured cheese filo pastry triangles. Since baked filo has a crunchy texture, it contrasts delectably with the soft, ooziness that brings melted cheese. And the cheese we’ve chosen to use is the much loved La Vache Qui Rit.

Ingredients

3 sheets of thawed filo pastry

8 wedges of La Vache Qui Rit (Laughing Cow) cheese

Method

Pre-heat the oven to 200ºC and place a rack on the middle shelf.

Unroll a filo pastry street and cut lengthwise into 4 strips, each about 10 cm wide.

For each filo triangle, unwrap and place a cheese wedge on the bottom left corner of one filo strip.

Bring the lower left-hand corner of the strip up and to the right diagonally so the bottom edge of the strip lines up with the right side of the strip, creating a triangle.

Fold the pocket upwards and then to the left and so on, as you would fold a flag. Place on a rimmed baking sheet.

Repeat with the remaining filo pastry sheets and cheese wedges.

La Vache Qui Rit

There are very few cheeses that take me back to my childhood the way La Vache Qui Rit does. Growing up in Mauritius, this soft, spreadable and scrumptious cheese was the epitome of fancy.

Also known as Laughing Cow among Anglophones, this commercial French cheese was the ultimate spread on a warm crunchy baguette. Or on toast.

To this day, I can still remember the sound the foil makes as you unwrap it to reveal its delicate little parcel of joy.
