									<p>Pleasant Ridge Reserve is a semi-hard cow&#8217;s milk cheese made in <a href="https://www.google.com/maps/place/Uplands+Cheese/@43.4770282,-92.1845214,6.91z/data=!4m5!3m4!1s0x87fd7a8d27cf2e63:0xc7568e582717da84!8m2!3d43.0565155!4d-90.1348476">Dodgeville, Wisconsin </a>by Uplands Cheese. Cheesemakers Andy and Scott drew their inspiration for its recipe from European mountain cheeses like Gruyère and Beaufort.</p><p>The story of this <a href="https://thecheeseatlas.com/tag/raw-milk">raw milk cheese</a> starts well before the cheesemaking process. Their farm is home to a <strong>unique herd of cows</strong>, which is the result of crossbreeding of nine different subspecies.</p><p>Furthermore, they exclusively feed the cows grass during the summer months using a rotational pasture system. Subsequently, this ensures continued access to fresh grass.</p>								</div>

									<p><span style="font-size: 16px;">Moreover, the cheesemakers only use flavourful milk collected from the months of May to October to make this cheese. The raw milk is made into 10lb (4.5kgs) wheels.</span></p><div class="column"><p>Afterwards, they hand-wash the wheels in a brine solution several times a week during the maturation process, for up to 12 months.
