Soft white mould cheese, also known as bloomy rind cheese, is a type of cheese that is covered with a white, edible mould during the ageing process. The mould gives the cheese a characteristic velvety rind and a soft, creamy interior. Moreover, they tend to have a mild, buttery flavour.
