While we don’t know much about the origin of blue cheese dip, we can find the first written evidence in Edgewater Hotel Salad Book in 1928.
By the 1930’s, this unique sauce had taken America by storm and was well on its way to becoming a staple.
Ingredients
200 g Gorgonzola Piccante, crumbled
100 ml sour cream
50 g mayonnaise
1 tbsp fresh milk (use buttermilk for extra richness)
¼ tsp rock salt, ground
⅛ tsp black pepper, ground
Method

Mix all ingredients together in a bowl, preferably three hours before you intend to serve the dip.

Keep cool in the refrigerator until ready to serve.
Gorgonzola Piccante
Gorgonzola Piccante is a traditional Italian blue veined cheese that originates from the Lombardia and Piemonte regions of northern Italy.
Actually, Gorgonzola is available for consumption at 2 different stages of maturity. The younger Gorgonzola Dolce is typically less than 3 months old.
On the other hand, Gorgonzola Piccante (Italian for spicy) version can be aged for up to twice that time. Indeed, its crumblier texture and more pronounced flavour make this type of Gorgonzola perfect for our dip.

Homemade Gorgonzola Blue Cheese Dip
Ingredients
- 200 g Gorgonzola Piccante crumbled
- 100 ml sour cream
- 50 g mayonnaise
- 1 tbsp fresh milk use buttermilk for extra richness

- 1/8 tsp black pepper ground
