Preheat your non-stick skillet or griddle over medium heat.
Layer half of the Cheddar, Mozzarella and Gruyère cheeses evenly on one bread slice.

Place another bread slice on top of the cheese to form a sandwich.
Repeat steps 2 and 3 with the remaining bread and cheese.
Spread softened butter on the outer sides of each sandwich.

Carefully place the sandwiches onto the preheated skillet or griddle.
Grill the sandwiches for about 3-4 minutes on each side, or until golden brown and the cheese has melted to a deliciously gooey consistency.
Once both sides are golden and the cheese has melted, remove the sandwiches from the skillet or griddle.
Allow the sandwiches to cool for a minute or two before slicing them in half diagonally. Optionally garnish with parsley and/or chives.
